Italian Style Roasted Cauliflower

I developed this recipe under duress! I stick to a low carb lifestyle, but sometimes you crave a flavor profile that always seems to manifest upon a substrate of refined carbohydrates. Cauliflower has become one of my go to ingredients upon which to superimpose my favorite flavors. The trick is in the technique you use to cook it. I hear, time and again, disdain expressed for this vegetable and I am certain its bad reputation is a result of its contempt for the horrible mistreatment it receives at the hands of well-meaning, but no less disrespectful, home cooks everywhere. Don’t steam cauliflower unless you intend to mash it! It desperately wants to turn into mash when it is steamed. In this recipe, you roast it to golden brown perfection and it becomes every bit as delicious as some of our beloved refined carbohydrate platforms.

 

1 large head of cauliflower

1 Red Bell Pepper

1 small Red Onion

1-2 cups of Marinara sauce

1 cup of Parmesan Cheese

5-6 cloves of Garlic minced (You can use granulated garlic)

1 package of Italian Sausage (Mild or Hot depending on your preference)

Olive Oil

1 tbsp dried Oregano

1 tbsp dried Basil

Salt and Pepper

 

To begin, preheat your oven to 500 degrees F and place a cooking tray inside to preheat. You want the oven and the tray to be ripping hot to get the caramelization you are looking for without compromising the texture of the cauliflower. While the oven and tray are preheating, prep your vegetables and brown the sausage in a frying pan. Quarter the Cauliflower, remove the leafy bits and cut each quarter lengthwise into ½ inch slices. Quarter the onion, leaving the root end intact, and thinly slice each segment. Slice the bell pepper. In a large bowl, combine all ingredients and coat with olive oil. Season to taste with salt, pepper, oregano, basil, and garlic. Toss it well so that the seasonings are evenly distributed. Remove your tray from the oven and spread the mixture out evenly. Place it back in the oven and cook for 15-20 minutes (stirring occasionally) or until golden brown around the edges. Remove from the oven and top with sausage and cheese. Place under the broiler until cheese is melted and golden brown. Remove from the oven and serve with a few spoonsful of hot marinara sauce drizzled over the top. Add more parmesan if you like. Fresh basil is great too. It’s basically pizza. Hammer down as you would normally!
